Wai Wai is the premium manufacturer of rice vermicelli noodles in Thailand. The noodles, known as 'Sen mee' in Thai, are delicious in rice noodle soup or stir fried with meat and vegetables (Pad Se Ew). Simply pre-soak in room-temperature water for 20 minutes (during which time the noodles will double in weight), drain then soak in hot water for 2 minutes or stir fry.

Rice vermicelli noodles are also used to make the famous 'Mee Krob' in which the dried noodle is quickly fried in hot oil until it puffs up like popcorn and then fried in a sweet and sour sauce.
